More Information: Crafted by renowned Stellenbosch winemaker David Finlayson, the 2022 Rhinory Signature Cabernet Sauvignon showcases the depth and structure that make Stellenbosch one of the world’s great regions for Cabernet. The wine is sourced from carefully selected vineyard sites planted to four outstanding Cabernet Sauvignon clones grown on Malmesbury shale and Hutton soils. The fruit was hand-harvested and fermented in stainless steel with traditional punch-downs and pump-overs to gently extract color and refined tannins before an extended maceration on the skins. The wine was then aged 18 months in French oak barrels before final blending, resulting in a structured, age-worthy Cabernet that reflects both the character of Stellenbosch and the classical winemaking influence Finlayson developed during his time working at Château Margaux.
